A Couple Recipes with Stories!

Now a bit of a diversion. I have two recipes with stories to share with you. The first is a chocolate treat. We celebrated our anniversary this month and I was so taken by the yummy dessert they brought us that I had to reverse engineer it.

Well, actually, I searched pinterest until I found what I wanted. It was the richest, creamiest chocolate and pumpkin flavor in a tiny square of yumminess. The closest I could find was this recipe for a Flourless Pumpkin Brownie. I am in love with these! And now I have a recipe!

 

The second is a Coronation Chicken recipe made by my friend Gaenor who is a trained chef and catered an event we hosted with Kenneth King as our guest. The reason I have it now and the event was quite a bit ago is because I've had people ask for the recipe after enjoying Gaenor's dish at our event. The most recent one prompted me to ask her for it even though she's now back across the pond.

Funny thing is, if you don't already know how to cook, you'd have a hard time with this one. Here is what she sent me when I asked if she'd share the recipe and she said, "of course". It’s mayonnaise, lemon juice, mango chutney, chopped apricots and raisins and pataks curry paste (korma or tikka). Can add some chopped spring onions, coriander, diced cucumber.... it’s very forgiving". Here's some measurements I've gleaned from recipes:

  • 1kg diced chicken breast (cooked)
  • 1 shallot, or ½ onion, finely chopped
  • ½ lemon, juice and zest
  • 2 tbsp curry paste
  • 2 tbsp mango chutney
  • 1/2 cup chopped dried apricots and raisins
  • 1/2 cucumber, diced
  • 300ml mayonnaise
  • 1 tbsp fresh coriander
  • Salt and pepper, to taste
